The engine cover under the passenger seat comes out without taking the seat section out. Then you can work on the port engine.
Once that cover is out, you can also work on the port sided of the starboard engine. To get to the starboard side, slide the whole pilot seat and cover thing over about a foot. You can then get to the starboard side of the starboard engine. Tight, but do able.

So far i have fixed a bunch of the wiring, some leaks on the fresh water plumbing, replaced the fuel fill lines and fuel lines from tanks to engines. A lot of smaller projects as well. The good thing is getting to know how everything works like you hinted to. Let me know if you have any questions as well. About to put in a new fridge and work on the rudder to steering cable connections.
