Replacement of countertops

The admiral wants the counters replaced on our 2000 396 Aft cabin. Has anyone done this task? How difficult is it to remove the old counters? I am talking about the counters in the salon and the galley. We will also replace the range top and the sink. Thanks.

In our project, I pulled all the old hardware (sinks, stove, vents) out, had my granite guy template for the new sinks and things, and simply stuck the new granite on top of the original counter.
Did this in the galley, the head, and the bedroom. Also up on the bridge.
Came out great.

I went a similar route with glass tile over the original material. Not a really difficult project and solid stone or some other materials can get very heavy.
