You might peruse some threads here. One member replaced their older cooktop with an induction cooktop and it looked really nice. I know you have to use special pots for them to work though.

Those cooktops are like watching water boil, slower as heck. First thing I did when we got Midnight Sun was to get rid of the stovetop and replace it with induction just like I did in the previous boat. You will need to look at different ones and hopefully you find one that will fit in the existing cutout. On Midnight I needed to cut out a bit as there was nothing that I found that would drop in.
I kid you not, the available heat from an induction will put a propane stove to shame. Check out Amazon, many models to choose from.
