carier bearings

Are the carrier bearings for the driveshafts easily replaced in my 76 mariner and are the readily available. And if so who has them

I assume you are taking about "cutlass bearings", as there are no drive shafts. They are called "prop shafts". They are readily available, you just need to measure the size of your prop shaft. How do you know that they need replaced?

i started her up on land to check the direction of rotation after replacing the shifters and heard some squeaking

How long after you started it did you hear the squeaking, and how long was the motor running before you shut her down?

i had it hooked up to water, and it started to squeak about 10 sec into shifting into forward

Dont forget that the water lubricates the cutlass bearing, so you were running dry. Its the wear you want to look at, how loose the shaft is in the bearing. It should be a tight fit, no slop - you shouldn't be able to wiggle it/move it laterally at all. If that is the way it is, don't worry about the squeak, it will be gone in the water.
