It's not "my method", it's what the U.S. Coast Guard suggests. I simply copied and pasted everything into that email.

Carver (Marquis now) will still have all the engineering data for your boat on file.

I know I am way late entering this conversation but if you intend to use the boat for commercial applications then you will probably be required to get an incline test performed by a naval architect. This test will give all the values you are looking for, including load limits. Further, you (or the captain)will be required to be licensed for the activity the boat will be carrying out.
