For anyone that has this problem, I think I figured out a solution but cosmetically may not look good. Going to cut in an access hatch in the shower stall so I can always access the plumbing. Beats ripping out all the countertop and potentially breaking that. I will post pictures when its done for anybody that wants an idea on how it looks.

Not sure where you are cutting in the shower, but I would rethink this one.
If you use the shower, you are making a long term problem for water leaks, and all of the problems that go along with that. I would bet you can cut the sealant and lift that faucet out / counter out with some patience.
