Hi All! Thanks so much for the advice. That “pipe” like cylinder you see at the bottom…..turns out there is a threaded cap on the end which threads in and sits flush. It was hard to see at first. Turns out it was just brittle and corroded. All it took away a couple tries with a few threaded caps from the hardware store. It was a thrilling last few weeks of the summer when the kids and I were able to actually use the head instead of walking the long trek to the marina bathrooms! I really appreciate the advice and support! I will have more questions this off-season when I go back to work on a few more projects. : ) Happy Holidays to everyone!
Not sure why I am Scurvy Dog lol. The boat is Happy Place.

Sure is a happy day when you eliminate that foul odor. A product I would also recommend is Kanberra gel. It is an odor control freshener and keeps your cabin very fresh. No perfume smell, and no gas/fiberglass general boat smell. Pricey, $18 for 2 ounce container, but lasts a long time in a small area. Your "scurvy dog" status will change as you are more active on the forum. You're not really a scurvy dog, I'm sure.
