Potable water system
I have an '86 Carver Mariner 3297. My water line from the dock water connection broke. The line extends into the engine compartment, but I can't see where it broke from. It appears to me that, perhaps, the line was branched off of the cold water supply to the water heater as I can only find one water line (gray Pex) running from the pump to the rear of the boat. Looking for insights into where that line was connected, water line schematic, etc.

That would typically be tied in between the potable pump and the water heater, so you're on the right track.
That grey stuff is NOT PEX. You should do yourself a favor and make plans to replace it ALL with PEX. It' not a huge project, nor very expensive to do and you'll rest easy knowing it's done. That grey stuff breaks down and will develop cracks and leaks continuously until it's replaced. I posted details and pics in the "projects" forum when I did it on my 3607.
