I'm looking into sprucing up the dashboard on my boat. I'm looking at the Sierra Lido series gauges. I priced out all the gauges and it would be a little under $600, and that seems too cheap and easy. Is there any reason these wouldn't just be a simple swap?

You have to ensure the resistance range of the senders on the engine, fuel tank, etc. match the gauge resistance spec for the oil pressure, temp, and fuel level. Tachs, volt gauge, sync, etc. don't matter as long as the tachs are designed for inboard/sterndrive gasoline application.
